Easter Dinner is Slow Cooking

I have brisket and a slice of a leg of lamb with a very nice rub on each that is slow cooking on the smoker.

We have some mini-golden fingerling potatoes simmering on the stove, which will made into smash potatoes with heavy whipping. We haven’t started the green beans.

I just wish we had started the brisket sooner. We are pushing it up against dinner time.

Karen and I have made an apple crumb.

Smoking Mahi Mahi

We are smoking in our Big Green Egg some Mahi Mahi.

We did an olive oil and garlic rub, which had a great aroma. I just hope it tastes great, too.

We have it smoking at 300 degrees, which is higher than I would normally smoke this fish. But, we would like to eat soon.

We will be eating it with a spinach salad and green beans.

Dinner with Hope

We headed to Bandito Burrito in Madison for dinner with my sister Hope. Hope is in town with her children, Hannah and Charlie.

We had a nice time chatting and Katie Beth loved the cheese dip as usual.

How to Treat Your Wife

Karen is relaxing while I cook dinner. She is enjoying a chocolate sauce with apples, marshmallows, apricots, ginger snaps, and pretzel sticks for dipping. The Verdi Imperial Stout doesn’t hurt either.

Dinner is coming along nicely, too.

New Year’s Day Dinner

We are smoking a bone-in pork loin for today’s dinner.

We are using the first of my rubs that I received for Christmas, which is a Grill Mates Applewood Rub by McCormick.

The black-eye peas are simmering on the stove.

Smoker and 27°F

You know that you are dedicated when you are firing up the smoker at these temperatures.

Yes, you are seeing snow fall and accumulate on the car as I am waiting for the lump charcoal to get to temperature.

I have some apple wood soaking. We are smoking lemon pepper seasoned chickens. Mmmm!

My First Eggs Benedict

I made my first Hollandaise sauce and Egg Benedict this morning.

The sauce was very easy, but many people think that it is too much work. As you can see, I didn’t use white pepper in the sause. I just didn’t want to change the pepper out in the grinder.

Karen thought it was very good, too.
